Kara and Brent Crossan took over Back Country Cuisine in 1998 from the Alliance Freezing Company, which had pioneered the freeze-dry process for military and commercial food production. Building on this heritage and their strong sense of family with the outdoor community, they have carried forward the production of freeze-dried food using the best of local New Zealand fresh produce.
